We love beer, we thank heaven. Begrudgingly, we admit we are not the authority on all things "beer," but we know our fair share. Enjoy the good brew with us; correct us where we're wrong.

[...] Last time, I left off by noting that my beer was chugging along nicely. However, I had reached the upper limits of the yeast type that I used, so what was I to do? Did you know that WLP 1099 has a fermentation potential of 25% ABV? That’s crazy. I didn’t add this at first because I wanted to really focus on normal yeasts as the backbone of the beer. However, as I mentioned before, I realized that I would not reach that goal because of wort viscosity (i.e., it was too thick). However, I knew that I could get it higher than it was, so I embarked on making the alcohol climb to a higher percent. What else could I do?
Sorry about the specifics going over your head. I was already writing a lot of stuff, so I didn't want to make it too huge a post. Even with the specifics, you still got where I was goig with it, so that's good. I won't have Molasses or beer concentrate when I'm done. It will be thick but I've been sipping on a few of the regular/unbourboned bottles, which are thicker than the bourbon ones, and they are very nice. The reason that it doesn't seem quite so thick is because of that high ABV, it has that thinning effect. Either way, I'm not too worried about that part of the process (although you ask a good one).

I'm shooting for higher than 30-30.5. I actually started out shooting for a little higher than TNP, which is 32%. Trust me, that's a difficult proposition. I'm going to post some more about where it ends up and my process in more post, so I'm saving that (I hate to be so coy). Again, the eisbocking question is a good one. I was able to achieve about 7 below in my freezer. I'm not using dry ice because I don't want to buy it. I thought about it and Nate mentioned it as well...I just wanted to try it straight up and see what happened. However, I've still seen some good freezing as a result of doing it. Ideally, it would be a little cold because it would speed up the process. I think the freezing component has been the most frustrating aspect to the whole beer.

Mike this is very interesting. A lot of the brewer specifics kinda went over my head, but my question is will you have Molasses when you are done? Sounds really thick. Also are you shooting for 30-30.5% ABV, or is that where it is now and the final product will be bigger? Finally, the Eisbocking is very intriguing to me. In the Brew dog film they used a freezer that got to around 30 below zero. How are you freezing your beer? Are you using dry ice to complement the freezer as well?

Family is family. Part of the reason I'm going is because my family lives a couple hours away and I get to be with them. I don't know that I would have gone otherwise.

Awesome! Looking forward to it. I wish I was going to DLD too, but it falls on Daddy / Daughter weekend. Maybe next year.

I am doing that (freeze distilling) as we speak. I'll send you one of "normal" bottles. Of course, it's still huge. You'll find out how huge tomorrow. If you like it, I'll be happy to send you the recipe. Just guard it...it may be proprietary at some point. I'm thinking of bringing the end result to Dark Lord Day I wish you were going to be there. Right now I'm figuring on getting two 12 ounces bottles of the finished beer. If I can find some smaller (6 ounce) bottles, I'll send you one of the four end beers.

Mike, this is fascinating! I'm really looking forward to what else you've done and reading the recipe, if you publish it. Keep it coming. Are you going to freeze distill?
ROCK ON!
